Our story
Open 24 hours, every day.
The Neon Griddle is a recipe publication built around the great American diner — the chrome-trimmed, flat-topped, coffee-refilled institution where the country has always eaten. We believe a stack of pancakes at 2 a.m. deserves as much craft as any tasting-menu course.
Breakfast tacos before dawn. Blue-plate specials by dinner. Viral picks because the internet eats too. Pull up a stool.
How we develop recipes
Each recipe is drafted, cooked, reviewed, and updated by The Neon Griddle test kitchen, the editorial team that maintains this catalog. Recipes are credited to the team rather than to named individuals: the same group develops, tests, and revises them, and we would rather name the accountable party accurately than attach a byline that does not describe how the work is done.
We record published and last-reviewed dates on every recipe, and we disclose when nutrition is estimated rather than measured.
Step 1
Draft
A recipe starts as a written draft with weights, times, and target temperatures. Nothing enters the catalog as an idea alone.
Step 2
Cook
The draft is cooked from its own written steps. Where the written method and the result disagree, the method is corrected.
Step 3
Review
A second editor reads the finished recipe end to end against the food-safety guidance and the ingredient list before it goes live.
Step 4
Date and re-review
Every recipe carries a published date and a last-reviewed date. Both are shown on the recipe and recorded in its structured data.
Editorial contact: editorial@neongriddle.com. If a recipe does not work as written, tell us and we will re-test and re-date it.
The catalog was last reviewed end to end on August 10, 2026.
Nutrition and food safety
Nutrition figures are estimated from each recipe’s listed ingredients using standard reference values, not measured in a laboratory. Where too many ingredients fall outside our reference data, or where the calculation contradicts the recipe’s own recorded figures, we publish no numbers at all and say so on the page. Nothing here is medical or dietary advice.
Recipes involving meat, poultry, seafood, or egg carry the relevant safe minimum internal temperatures from the USDA Food Safety and Inspection Service, along with handling and reheating guidance.
How we make money
Recipe pages carry advertising and affiliate links. Equipment modules recommend a category of tool and explain the criteria behind each suggestion; they are not tested product reviews, because we do not run a product testing program. Affiliate links are labeled and carry rel="sponsored nofollow". As an Amazon Associate we earn from qualifying purchases. No paid product is ever presented as a required recipe ingredient, and commercial relationships never determine what we publish.
