  • Solid block of feta cheese1 ½ cups
  • Cherry tomatoes2 cups
  • Olive oil3 tbsp
  • Eggs4
  • Red pepper flakes1 tsp
  • Crusty bread4 slices

Instructions

    Bake through

    Place the block of feta in the center of a small baking dish; surround tightly with cherry tomatoes.

    Roast the feta

    Drench in olive oil and bake at 400°F until the tomatoes burst and the feta softens.

    Arrange & plate

    Crack the eggs directly over the bubbling cheese/tomato matrix; return to the oven until the egg whites set but the yolks remain fluid.

    Serve with bread

    Serve with crusty bread.
