Instructions

    Squeeze potato dry. Press into a hot, oiled griddle in a thin round; cook undisturbed until deep golden, 6 minutes.

    Crumble chorizo alongside; cook until rendered and lacquered.

    Char tortillas

    Blister each corn tortilla directly over the flame or on the flat-top.
