  • Spicy mayo3 tbsp
  • Fresh sushi-grade salmon1 lb
  • Soy sauce1 cup
  • Sesame oil3 tbsp
  • Thin jalapeño slices6 slices
  • Frying oil3 tbsp

Instructions

    Press & sear

    Press cooked sushi rice firmly into a rectangular mold; chill until the starches retrograde and solidify.

    Fry crisp

    Cut into small rectangles and pan-fry in oil until the exterior is a rigid, crispy shell.

    Slice & serve

    Top each rice block with a mixture of finely diced raw salmon, spicy mayo, soy, and sesame oil, finishing with a single slice of raw jalapeño.

Cook it safe
