  • Cheddar1 ½ cups
  • Mozzarella1 ½ cups
  • Heavy tomato sauce½ cup
  • Pepperoni12 slices

Instructions

    Press & sear

    Press the dough into a buttered square steel pan.

    Fry crisp

    Build a dense wall of cheddar cheese around the perimeter to fry against the metal, creating a crispy "frico" crust.

    Top & garnish

    Top the center with mozzarella, ladles of sauce in racing stripes, and pepperoni.

    Bake at 500°F.

    Fold & finish

    Remove from the pan, cut the rectangle in half, and fold the two halves inward against each other to form a massive sandwich.
