Instructions

    Sauté aromatics

    Sauté the finely diced jalapeño, onion, and tomato to release aromatics.

    Soft-scramble

    Add the crushed tortilla chips and the beaten eggs simultaneously; scramble continuously so the chips hydrate slightly in the egg proteins but retain a core crunch.

    Fold & finish

    Fold in cheddar cheese and serve in a warm tortilla.
