Instructions

    Sauté aromatics

    Sauté the corn, rinsed black beans, and peppers in a hot skillet to blister the exteriors.

    Pour the beaten eggs directly over the vegetable matrix and scramble until set.

    Serve in a warm tortilla, topped with melting pepper jack and thickly sliced avocado to provide necessary lipids.
