  • Clam juice1 cup
  • Diced russet potatoes2 lb
  • Thick-cut bacon1 lb
  • Heavy cream1 cup
  • Celery1 cup
  • Onion, diced1

Instructions

    Sauté aromatics

    Render the bacon to extract the fat; sauté the celery and onions in the drippings.

    Simmer the potatoes

    Add the potatoes and clam juice, simmering until the starches release and the potatoes are tender.

    Stir in the heavy cream and chopped clams.
