Instructions

    Marinate

    Marinate the chops briefly in the oil and aromatics.

    Griddle & mark

    Grill over direct, extremely high heat to establish dark, caramelized grill marks.

    Finish to temp

    Move the chops to the cooler, indirect side of the grill, close the lid, and finish cooking until the internal temperature hits 145°F.

    Rest the meat

    Rest the meat for 5 minutes to allow the muscle fibers to relax and retain juices.
